This one bowl yoghurt, honey and olive oil cake is excellent served warm with a
proper cup of tea.
I make it in a square tin, cut it into slices and freeze it so it stays fresh and moist.
If you have company it is delicious served with thick cream.
INGREDIENTS
1 cup natural yoghurt
2/3 cup olive oil
2/3 cup honey
1 tab lemon juice
3 eggs
1 1/2 cup plain flour
1/2 tsp baking power
1/2 tsp baking soda
METHOD FOR THE PERFECT ONE BOWL CAKE
Preheat oven to 180 and line your baking tin.
In a large bowl whisk together the first four ingredients then add the eggs one at a time whisking after each addition.
Sift the dry ingredients into the bowl and using a spatula mix until just combined.
Pour in to the tin and bake for 30 mins for flat square tin or 40 mins for deep round tin. It is baked when a knife inserted in the middle comes out clean.
Cool on a rack and serve warm.
If you are feeling boujee warm some extra honey to brush over the top and serve with a dollop of thick cream.
